- 2 zucchini or yellow squash, sliced lengthwise into about four 1/4-inch slices
- 2 small plum tomatoes, diced
- 2 tablespoons freshly grated Parmesan cheese
- 2 tablespoons olive oil
- 1/4 cup minced red onion
- 1 tablespoon fresh, minced basil
- 1 tablespoon fresh, minced chives
- 1/2 teaspoon salt
- 1/4 to 1 teaspoon ground red pepper, optional
- Heat grill or grill pan over medium-high heat; grill squash until grill marks form, about 1 minute per side.
- Combine the tomatoes, cheese, oil, onion, basil, chives, salt and ground red pepper in a small bowl; spoon mixture onto grilled squash.
- Place squash on a rack in a stove-top smoker; smoke over low heat until squash is just tender, about 10 minutes.
