Skillet Smoked Sausage and Red Potatoes with Veggies Recipe

  • 2 tablespoons olive oil
  • 8 small red potatoes, quartered
  • 1 (14 ounce) package Hillshire Farm® Smoked Sausage, cut into 1/2-inch slices
  • 1 cup chopped sweet onion
  • 1 cup sliced zucchini
  • 1 cup sliced yellow squash
  • 1/4 cup chopped jalapeno chile
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  1. Heat oil in a large nonstick skillet. Add potatoes; cook and stir to coat potatoes with oil. Cover and cook for 15 minutes, turning occasionally. Add sausage, onion, zucchini, yellow squash, and green chili. Season with onion powder, paprika, parsley, and salt.
  2. Cover and cook until veggies are beginning to soften or to taste, about 10 minutes.
