- 2 (14.5 ounce) cans stewed tomatoes
- 1 cup chopped sweet green pepper
- 4 shallots, chopped
- 2 teaspoons dried Italian seasoning
- 8 ounces ziti or penne
- 1/4 cup grated Parmesan cheese
- In large skillet, cook tomatoes, peppers, shallots, and Italian seasoning over medium heat until peppers are crisp-tender, about 5 minutes. Toss with hot pasta. Sprinkle with Parmesan.
