- 1 (6 ounce) package bulgur
- 1 1/4 cups boiling water
- 2 tablespoons olive oil
- 1/2 pound small peeled and cooked shrimp
- 1 cucumber, peeled and diced
- 1 cup chopped red onion
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh parsley
- 1 lemon, juiced
- Place the bulgur in a large bowl and add the boiling water and oil. Cover and let stand for 30 minutes.
- Stir in the shrimp, cucumber, onion, mint, parsley, and lemon juice. Serve warm, or chill for at least an hour and serve cold.
