- dash olive oil
- 85g/3oz salmon fillet
- salt and freshly ground black pepper
- 25g/1oz butter
- 1 tbsp olive oil
- 100g/3½oz roasted peppers (from a jar)
- 2 tsp honey
- 2 tsp red wine vinegar
- 1 tbsp soy sauce
- 2 tbsp sun-dried tomatoes
- For the seared salmon, heat the olive oil in a frying pan, season the salmon with salt and freshly ground black pepper and fry for 1-2 minutes on both sides, or until browned all over.
- For the sweet and sour peppers, heat the butter and oil in a frying pan, add the rest of the pepper ingredients and simmer for five minutes, or until the peppers are tender.
- To serve, spoon the peppers onto a serving plate and top with the salmon. Drizzle around some of the pan juices.
