Seared salmon fillet with sweet and sour peppers Recipe

  • dash olive oil
  • 85g/3oz salmon fillet
  • salt and freshly ground black pepper
  • 25g/1oz butter
  • 1 tbsp olive oil
  • 100g/3½oz roasted peppers (from a jar)
  • 2 tsp honey
  • 2 tsp red wine vinegar
  • 1 tbsp soy sauce
  • 2 tbsp sun-dried tomatoes
  1. For the seared salmon, heat the olive oil in a frying pan, season the salmon with salt and freshly ground black pepper and fry for 1-2 minutes on both sides, or until browned all over.
  2. For the sweet and sour peppers, heat the butter and oil in a frying pan, add the rest of the pepper ingredients and simmer for five minutes, or until the peppers are tender.
  3. To serve, spoon the peppers onto a serving plate and top with the salmon. Drizzle around some of the pan juices.
