Scallops with Sweet Balsamic and Onions Recipe

  • 10 each Waterfront BISTRO® Scallops, Jumbo 8-12 size, thawed
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 2 tablespoons O Organics™ Extra Virgin Olive Oil
  • 1 tablespoon chopped garlic
  • 1 medium red onion, cut into half and sliced 1/4 inch thick
  • 1/4 cup Safeway SELECT® Balsamic Vinegar
  • 1 teaspoon granulated sugar
  • 1 tablespoon Lucerne® Unsalted Butter
  1. Heat oil in 12 inch non stick sauté pan over medium heat until warm.
  2. Season Scallops with salt and pepper; add to pan and sauté for 1 minute each side.
  3. Add onions and garlic, sauté for 1 minute.
  4. Reduce heat to low, add vinegar, sugar and butter, cook for 1-2 minutes or until thickened.
  5. Serve over rice pilaf and sautéed spinach. Enjoy!
