- 10 each Waterfront BISTRO® Scallops, Jumbo 8-12 size, thawed
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground black pepper
- 2 tablespoons O Organics™ Extra Virgin Olive Oil
- 1 tablespoon chopped garlic
- 1 medium red onion, cut into half and sliced 1/4 inch thick
- 1/4 cup Safeway SELECT® Balsamic Vinegar
- 1 teaspoon granulated sugar
- 1 tablespoon Lucerne® Unsalted Butter
- Heat oil in 12 inch non stick sauté pan over medium heat until warm.
- Season Scallops with salt and pepper; add to pan and sauté for 1 minute each side.
- Add onions and garlic, sauté for 1 minute.
- Reduce heat to low, add vinegar, sugar and butter, cook for 1-2 minutes or until thickened.
- Serve over rice pilaf and sautéed spinach. Enjoy!
