- 1 sweet potato, diced
- 3 tbsp olive oil
- ½ red onion, chopped
- 1 tsp ground coriander
- 3 tbsp fresh coriander, chopped
- Cook the sweet potato in boiling water until just tender. Drain.
- In a pan heat the olive oil and add the red onions and ground coriander. Cook for 2-3 minutes.
- Add the sweet potatoes to the pan with the red onion, stir in the fresh coriander and cook until golden.
