Santa Fe Stir-Fry Steak Fajitas Recipe

  • 2 tablespoons canola oil
  • 1 cup yellow onion, cut into strips
  • 1 1/2 cups zucchini, diagonal-sliced
  • 1 1/2 cups yellow squash, diagonal-sliced
  • 1 1/2 cups red bell pepper, cut into strips
  • 1 (6 ounce) package fully cooked seasoned steak strips, defrosted
  • 1 (7 ounce) package Borden® Shred Medleys™ Southwestern Style Shredded Cheese, seasoned according to package directions
  • fajita size flour tortillas, warmed
  • chunky salsa
  • sour cream
  1. HEAT oil in large skillet over medium-high heat. Add onions and stir-fry for 2 minutes.
  2. ADD zucchini, squash and bell pepper. Stir-fry over medium-low heat until tender-crisp. Add steak strips and stir-fry until fully heated. Remove from heat.
  3. TOP with seasoned cheese; cover and let stand until cheese melts.
  4. SERVE with flour tortillas, salsa and sour cream.
