- 2 tablespoons canola oil
- 1 cup yellow onion, cut into strips
- 1 1/2 cups zucchini, diagonal-sliced
- 1 1/2 cups yellow squash, diagonal-sliced
- 1 1/2 cups red bell pepper, cut into strips
- 1 (6 ounce) package fully cooked seasoned steak strips, defrosted
- 1 (7 ounce) package Borden® Shred Medleys™ Southwestern Style Shredded Cheese, seasoned according to package directions
- fajita size flour tortillas, warmed

- HEAT oil in large skillet over medium-high heat. Add onions and stir-fry for 2 minutes.
- ADD zucchini, squash and bell pepper. Stir-fry over medium-low heat until tender-crisp. Add steak strips and stir-fry until fully heated. Remove from heat.
- TOP with seasoned cheese; cover and let stand until cheese melts.
- SERVE with flour tortillas, salsa and sour cream.
