- 6 veal scallops
- 6 strips smoked ham
- 12 fresh sage leaves
- Salt, to taste
- Pepper, to taste
- Flatten veal scallops and ham strips with a meat tenderizer or rolling pin; cut veal and ham strips in half.
- On top of each piece of veal, place a strip of ham and one sage leaf Keep in place with a toothpick.
- Cook flat on the plancha for 4 to 5 minutes on each side.
- Season with salt and pepper then serve.
- Serving Suggestion: This goes well with spicy tomato sauce.
