Salmon Casserole Recipe
- 1 cup low carb pasta
- 8 ounces canned salmon
- 1 cup Ranch salad dressing
- 1/4 teaspoon dill
- 4 ounces canned mushroom slices
- 2 scallions, chopped
- 4 ounces Parmesan cheese
- Preheat oven to 350 degrees F.
- Cook the low carb pasta in boil water according to the directions on the package except reduce the time by 2 or 3 minutes. Drain well.
- Meanwhile, drain and flake the salmon; set aside.
- In a large bowl, mix together the ranch dressing, mushrooms, dill and scallions.
- When pasta is cooked and drained, add it to the ranch dressing mixture. Mix well. Add the flaked salmon and gently toss until well distributed. Spoon into a butter casserole dish. Top with the Parmesan cheese and bake at 350 degrees F for about 20 minutes.
