- 1/2 cup couscous
- 3/4 cup orange juice
- 1 (14.75 ounce) can red salmon, drained, broken up
- 1 (10 ounce) box frozen chopped spinach – thawed, drained and squeezed dry
- 1 egg, beaten
- 2 cloves garlic, crushed
- 2 teaspoons ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons olive oil
- Prepare couscous according to package directions replacing the water with the orange juice.
- In a bowl, combine the cooked couscous, salmon, spinach, egg, garlic, cumin, salt and black pepper. Form into 4 patties.
- Heat oil in a large skillet over medium heat, add patties, fry each side until golden brown, about 6 to 8 minutes.
