Salat Yirakot Recipe
- 2 tomatoes, diced
- 2 green bell peppers, diced
- 1 red bell pepper, diced, or more to taste
- 1/2 cucumber, diced
- 1/2 cup olive oil
- 1/2 red onion, diced
- 2 scallions, chopped
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh parsley, or to taste
- 1 tablespoon chopped fresh mint, or to taste
- 1 tablespoon chopped fresh dill, or to taste
- 2 teaspoons vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon ground sumac
- salt and ground black pepper to taste
- Combine tomatoes, green bell peppers, red bell pepper, cucumber, olive oil, red onion, scallions, lemon juice, parsley, mint, dill, vinegar, garlic, sumac, salt, and pepper in a large bowl; mix thoroughly.
- Chill tomato mixture until flavors combine, about 25 minutes.
