Salad Bar Cobb Recipe
- 1/2 cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon chopped fresh chives
- 2 teaspoons honey-Dijon mustard
- 2 teaspoons Worcestershire sauce
- 2 4 1/2-ounce packages baby greens
- 2 cups diced smoked turkey or chicken (about 10 ounces)
- 2 cups diced plum tomatoes
- 1 1/2 cups diced avocados
- 1 cup chopped peeled hard-boiled eggs
- 1 cup crumbled cooked bacon
- 1 cup crumbled blue cheese
- Blend first 5 ingredients in small bowl. Season dressing with salt and pepper.
- Divide greens among 6 plates. Place rows of turkey, tomatoes and avocados atop greens. Sprinkle each salad with eggs, bacon and blue cheese. Drizzle salads with dressing and serve.
