Rotisserie Chicken Salad Recipe

  • 5 pounds deli rotisserie chicken, boned and meat chopped
  • 1 white onion, chopped
  • 4 hard-boiled eggs, chopped
  • 1/2 cup sweet-hot pickle relish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup mayonnaise, or to taste
  • salt and ground black pepper to taste
  1. Combine chicken, onion, eggs, pickle relish, mustard, paprika, and red pepper flakes in a bowl; stir in mayonnaise by spoonfuls until mixture holds together but isn't too moist. Season salad with salt and pepper.
