- 3 (4- by 1-inch) strips fresh orange zest
- 2/3 cup fresh orange juice
- 1/2 cup sugar
- 1/4 cup water
- 6 small clusters fresh rosemary leaves
- Boil all ingredients together in a 1-quart heavy saucepan until reduced to about 3/4 cup, about 15 minutes. Cool to warm or room temperature.
