Roastini Recipe
- 1 (24 ounce) package Bob Evans® Original Mashed Potatoes
- 2 tablespoons prepared horseradish
- 8 (1 ounce) slices medium rare roast beef
- 1/2 cup au jus
- 4 ounces crumbled goat cheese
- 4 teaspoons crispy fried shallots
- 1 tablespoon snipped chives
- Prepare Bob Evans Original Mashed Potatoes by following the recommended microwaving instructions on the package.
- Mix in 2 Tbsp of prepared horseradish until well combined.
- Place 6 oz. of Bob Evans Original Mashed Potatoes with horseradish in a martini glass.
- Top with 2 slices of medium rare roast beef, mounded in the center.
- Top with 1 oz of au jus.
- Place 2 Tbsp goat cheese over beef and au jus.
- Top with 1 tsp. crispy shallots
- Garnish with fresh snipped chives
