Roasted Pumpkin Recipe

  • 1 fresh sugar pumpkin
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons butter, melted
  1. Heat oven to 400 degrees F. Line 15×10-inch baking pan with sides with foil
  2. Cut pumpkin into quarters, scrape out seeds. Cut into 8 serving-sized pieces and arrange on baking sheet.
  3. Mix remaining ingredients except butter in small bowl; rub pumpkin with sugar mixture. Drizzle with melted butter.
  4. Bake about 1 hour or until pumpkin is fork tender.
