Roasted Pumpkin Recipe
- 1 fresh sugar pumpkin
- 1/4 cup brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1 tablespoon balsamic vinegar
- 2 tablespoons butter, melted
- Heat oven to 400 degrees F. Line 15×10-inch baking pan with sides with foil
- Cut pumpkin into quarters, scrape out seeds. Cut into 8 serving-sized pieces and arrange on baking sheet.
- Mix remaining ingredients except butter in small bowl; rub pumpkin with sugar mixture. Drizzle with melted butter.
- Bake about 1 hour or until pumpkin is fork tender.
