Roasted chilli balsamic tomatoes Recipe

  • 100g/3½oz cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 red chilli, finely chopped
  • salt and freshly ground black pepper
  • dash Tabasco sauce
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Place the cherry tomatoes onto a baking sheet, sprinkle over the remaining ingredients and stir to coat the tomatoes.
  3. Place in the oven and roast for ten minutes, or until softened. Spoon into a bowl and serve as a side dish.
