- 25g/1oz butter
- ½ sweet potato, peeled and cubed
- 1 lime, cut in half
- 1 clove garlic
- ½ pint chicken or vegetable stock
- 1 tbsp honey
- Melt the butter in a saucepan. Add the potato, lime and the garlic. Cook for three minutes.
- Add the chicken or vegetable stock and honey. Cook for ten minutes. Remove the lime and discard. Blend the soup with a hand blender until smooth.
- Serve in a large soup bowl.
