Risi et Bisi Recipe

  • 2 tablespoons Archer Farms™ olive oil
  • 1/2 cup chopped onion
  • 1 cup Archer Farms™ baby basmati rice
  • 1 (14.5 ounce) can chicken broth
  • 1 cup sugar snap peas, cut in half
  • 1/4 cup water, if necessary
  • 1/4 (6 ounce) package Archer Farms™ lemon pepper parmesan seafood butter
  1. Heat oil in medium saucepan over medium heat. Add onion; cook about 3 minutes, stirring occasionally, or until onion begins to soften. Add rice; cook and stir 2 minutes.
  2. Add broth; bring to boiling. Reduce heat to medium-low and simmer uncovered 15 minutes.
  3. Add peas and water, if rice has absorbed all liquid. Reduce heat to low and cook covered 5 minutes.
  4. Remove from heat; let stand covered 5 minutes. Stir in seafood butter. Season to taste with salt and pepper.
