Risi et Bisi Recipe
- 2 tablespoons Archer Farms™ olive oil
- 1/2 cup chopped onion
- 1 cup Archer Farms™ baby basmati rice
- 1 (14.5 ounce) can chicken broth
- 1 cup sugar snap peas, cut in half
- 1/4 cup water, if necessary
- 1/4 (6 ounce) package Archer Farms™ lemon pepper parmesan seafood butter
- Heat oil in medium saucepan over medium heat. Add onion; cook about 3 minutes, stirring occasionally, or until onion begins to soften. Add rice; cook and stir 2 minutes.
- Add broth; bring to boiling. Reduce heat to medium-low and simmer uncovered 15 minutes.
- Add peas and water, if rice has absorbed all liquid. Reduce heat to low and cook covered 5 minutes.
- Remove from heat; let stand covered 5 minutes. Stir in seafood butter. Season to taste with salt and pepper.
