Rice and Bean Brrrr-ito Recipe

  • 2 cups frozen rice and beans mix
  • 2 tablespoons reduced-fat sour cream
  • 1 roma tomato, chopped
  • 1 green onion, chopped
  • 1 (10-inch) whole-wheat flour tortilla
  • Salsa
  1. Microwave the rice and beans mix according to package instructions. Stir together with sour cream, then put the mixture in the tortilla. Add the tomato and green onion. Fold the tortilla's ends in, then roll it up. Top with salsa.
