Rhubarb Slice Recipe
- 1 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup canola margarine, melted
- 1 egg, beaten
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 cup canola margarine, melted
- 2 eggs, beaten
- 2 tablespoons cream
- 4 cups chopped rhubarb
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- Preheat oven to 180 degrees C (350 degrees F).
- In a bowl, mix together flour, brown sugar, baking powder, salt, butter and egg. Reserve 1 cup; pat remainder into a greased 8-inch pan.
- In another bowl combine granulated sugar, 1/2 cup flour, butter, eggs, cream and rhubarb, stir. Pour over crust. Sprinkle reserved crumbs over top.
- Mix together sugar and cinnamon, sprinkle over top. Bake until custard is set, about 60 minutes.
