Rhubarb Slice Recipe

  • 1 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup canola margarine, melted
  • 1 egg, beaten
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup canola margarine, melted
  • 2 eggs, beaten
  • 2 tablespoons cream
  • 4 cups chopped rhubarb
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  1. Preheat oven to 180 degrees C (350 degrees F).
  2. In a bowl, mix together flour, brown sugar, baking powder, salt, butter and egg. Reserve 1 cup; pat remainder into a greased 8-inch pan.
  3. In another bowl combine granulated sugar, 1/2 cup flour, butter, eggs, cream and rhubarb, stir. Pour over crust. Sprinkle reserved crumbs over top.
  4. Mix together sugar and cinnamon, sprinkle over top. Bake until custard is set, about 60 minutes.
