- 1 large baked potato
- 2 tablespoons oats
- 1 scallion, chopped
- 1 teaspoon mustard
- Celery, chopped (optional)
- Chopped fresh parsley (optional)
- Spoon the potato flesh into a bowl and discard the skin. Combine ingredients and mash well with a fork. Form mixture into balls and flatten into pancakes with your palm. Coat a frying pan with nonstick spray and cook pancakes until brown.
