Quick-Poached Salmon Recipe

  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill weed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds salmon fillet, bones removed
  • 1/4 cup lemon juice
  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Mix butter, garlic, dill, salt and pepper in a small bowl.
  3. Place salmon on a piece of heavy-duty foil and pour lemon juice over the fish. Rub dill mixture all over. Seal completely in foil and bake until just cooked through, about 20 minutes.
