- 2 thin slices bread, cut from a round loaf
- 50g/1žoz tinned cherry tomatoes
- 50g/1žoz goats' cheese, crumbled
- 2 handful rocket salad
- 1 handful basil
- 2 tbsp olive oil
- Preheat the oven to 200C/390F/Gas 6.
- Place the slices of bread on a baking tray and top with the cherry tomatoes.
- Scatter over the goats' cheese, rocket and basil leaves. Drizzle over the olive oil.
- Cook in the oven for five minutes or until golden.
- Serve.
