Quick Gazpacho Recipe

  • 1 cup water
  • 1 pound fresh tomatoes, peeled and diced
  • 1 cucumber, peeled and sliced
  • 1/4 cup mixed vegetable flakes
  • 1 tablespoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Morton Lite Salt® Mixture
  • 1/8 teaspoon ground red pepper
  • 1/4 cup olive or vegetable oil
  • 2 tablespoons wine vinegar
  • optional: croutons, diced tomato and cucumber
  1. In an electric blender, combine all ingredients except oil and vinegar. Cover and blend until almost smooth. Stir in oil and vinegar. Chill well. Cover and refrigerate at least 2 hours or overnight. Serve in bowls and, if desired, garnish with croutons, diced tomato and cucumber.
