Quick Gazpacho Recipe
- 1 cup water
- 1 pound fresh tomatoes, peeled and diced
- 1 cucumber, peeled and sliced
- 1/4 cup mixed vegetable flakes
- 1 tablespoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Morton Lite Salt® Mixture
- 1/8 teaspoon ground red pepper
- 1/4 cup olive or vegetable oil
- 2 tablespoons wine vinegar
- optional: croutons, diced tomato and cucumber
- In an electric blender, combine all ingredients except oil and vinegar. Cover and blend until almost smooth. Stir in oil and vinegar. Chill well. Cover and refrigerate at least 2 hours or overnight. Serve in bowls and, if desired, garnish with croutons, diced tomato and cucumber.
