Quaker® Mexican Pizza Recipe

  • 1 (16 ounce) can fat-free refried beans
  • 1 cup salsa
  • 2 plum tomatoes, diced
  • 1 (4 ounce) can chopped green chilies, drained
  • 1/2 cup chopped green peppers
  • 1/4 cup chopped onion
  • 1 cup shredded low-fat Cheddar cheese
  • 12 Quaker® Salt Free or Lightly Salted Rice Cake
  1. Heat beans and spread over Quaker Salt Free or Lightly Salted Rice Cakes.
  2. Layer with salsa, tomatoes, chilies, green pepper, onion and cheese.
  3. Garnish with low-fat sour cream, if desired.
