Prune Yogurt Spice Loaf Recipe

  • 1 cup all-purpose flour
  • 1 cup quick cooking oats
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon grated nutmeg
  • 1/2 teaspoon ground cloves
  • 1 cup plain yogurt
  • 1 cup chopped pitted prunes
  • 1/2 cup white sugar
  • 2 eggs, beaten
  • 1 teaspoon maple syrup
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
  2. Mix flour, oats, baking powder, ground ginger, baking soda, nutmeg, and cloves together in a bowl.
  3. Whisk yogurt, prunes, sugar, and eggs together in a large bowl; add flour mixture and stir. Fold maple syrup into the mixture; pour into prepared loaf pan.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes. Cool in the pans for 5 minutes before removing from pan to a wire rack to cool completely.
