- 1/2 cup pinto beans
- 2 tablespoons salsa
- 1 (10 inch) flour tortilla
- 2 tablespoons sour cream
- 1/2 cup shredded lettuce
- 1/2 tomato, diced
- 2 tablespoons onion, chopped
- In a small dish, mash the beans with a fork; stir in salsa. Microwave tortilla on high for 15 seconds to soften. Spread bean mixture on tortilla and top with chopped vegetables. Fold up bottom and sides of tortilla and roll to make burrito. Microwave on high 1 minute. Top with sour cream.
