Prawns with almond and parsley crust Recipe

  • 200g/7oz raw tiger prawns
  • 2 tbsp Dijon mustard
  • 100g/3½ oz toasted flaked almonds, crushed fine
  • 2 tbsp chopped parsley
  1. Pre-heat the oven 200C/400F/Gas 6
  2. Mix together the almonds and parsley.
  3. Rub the prawns with the mustard and roll in the mixture. Place on a baking tray in a single layer and cook for 5-6 minutes.
  4. Serve warm or cold.
