Potato Soup with Ham Recipe

  • 5 potatoes, diced
  • 1 cup diced fully cooked ham
  • 2/3 cup finely chopped leek
  • 1/3 cup diced celery
  • 1/3 cup diced carrots
  • 1/4 cup butter
  • 1 tablespoon garlic powder
  • 1 teaspoon dill
  • 1 bay leaf
  • salt to taste
  • coarsely ground black pepper to taste
  • 48 fluid ounces low-sodium chicken broth
  1. Combine potatoes, ham, leek, celery, carrots, butter, garlic powder, dill, and bay leaf in a slow cooker; season with salt and pepper. Pour chicken broth over the mixture.
  2. Cook on Low for 8 hours.
