Potato Chip Crunchies Recipe

  • 2 cups butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 cup crushed potato chips
  • 1 cup chopped pecans
  1. In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Gradually add flour. Fold in the potato chips and pecans. Drop by tablespoonfuls 1-1/2 in. apart onto ungreased baking sheets. Flatten with a fork. Bake at 350 degrees F for 12-14 minutes or until golden brown. Remove to wire racks to cool.
