Potato, broccoli and pepper hash with fried egg Recipe

  • 1 small potato, peeled, chopped
  • 100g/3½oz broccoli, chopped
  • ½ yellow pepper, chopped
  • 1 tbsp olive oil
  • salt and freshly ground black pepper
  • 1 free-range egg, fried to your liking
  1. Place the potato into a medium saucepan of boiling water and boil for five minutes.
  2. Add the broccoli and boil for two minutes.
  3. Add the pepper and boil for another two minutes, then remove from the heat and drain.
  4. Add the olive oil, season, to taste, with salt and freshly ground black pepper and mash together.
  5. To serve, pour the mash mixture into a bowl and place a fried egg on top.
