Pork escalope Recipe

  • 1 escalope of pork
  • 1 egg, beaten
  • 50g/1¾oz oats
  • 50g/1¾oz breadcrumbs
  • 2 tbsp olive oil
  • ½ apple, cored and sliced
  • 50g/1¾oz butternut squash, chopped
  • 3 tbsp double cream
  • 3 tbsp white wine
  1. Mix the egg, oats and breadcrumbs together in a bowl. Dip the pork in the mixture to coat.
  2. Heat one tablespoon of the olive oil in a pan and fry the pork for 4-5 minutes on each side, or until golden brown.
  3. Meanwhile, gently heat the remaining tablespoon of olive oil in a pan and sauté the apple and butternut for 8-10 minutes or until soft.
  4. Add the cream and wine and reduce to make a creamy sauce.
  5. Serve the pork on top of the creamy vegetables.
