Pinto Bean Pie I Recipe
- 1 cup cooked pinto beans with juice
- 4 eggs, room temperature
- 3 cups white sugar
- 1 tablespoon vanilla extract
- 1 cup butter, melted
- 1 cup flaked coconut
- 2 (9 inch) deep dish frozen pie crusts, thawed
- Preheat oven to 325 degrees F (165 degrees C).
- Mash beans until very smooth; set aside. In a large bowl, beat eggs; mix in beans, sugar, vanilla, melted butter or margarine, and coconut until well blended. Pour filling into two pie crusts.
- Bake until filling is set, about 1 hour.
