Pineapple carpaccio with mint Recipe

  • 1/3 pineapple, sliced into thin rounds on a mandolin
  • 50g/1žoz caster sugar
  • 1 small bunch of mint leaves only
  • 1 orange, juice only
  1. In a pestle and mortar grind the mint and sugar together until they are well crushed.
  2. Add the orange juice.
  3. To serve place the mint topping all over the pineapple.
