- 1/3 pineapple, sliced into thin rounds on a mandolin
- 50g/1žoz caster sugar
- 1 small bunch of mint leaves only
- 1 orange, juice only
- In a pestle and mortar grind the mint and sugar together until they are well crushed.
- Add the orange juice.
- To serve place the mint topping all over the pineapple.
