Pickled Orange-Mint Carrot Ribbons Recipe

  • 3 tablespoons raisins
  • 2 carrots
  • 3 tablespoons canola oil
  • 1/4 cup orange juice
  • 1 tablespoon vinegar
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh mint
  1. Rinse raisins in warm water; drain.
  2. Peel carrots. Using a vegetable peeler, make ribbons of the two carrots. Sprinkle carrots with few drops of water, and microwave on high power for 30 seconds. Drain.
  3. Combine canola oil, orange juice, vinegar and salt. Pour oil mixture over carrots. Add raisins and mint. Cool before serving.
