- 3 tablespoons raisins
- 2 carrots
- 3 tablespoons canola oil
- 1/4 cup orange juice
- 1 tablespoon vinegar
- 1/2 teaspoon salt
- 1 tablespoon chopped fresh mint
- Rinse raisins in warm water; drain.
- Peel carrots. Using a vegetable peeler, make ribbons of the two carrots. Sprinkle carrots with few drops of water, and microwave on high power for 30 seconds. Drain.
- Combine canola oil, orange juice, vinegar and salt. Pour oil mixture over carrots. Add raisins and mint. Cool before serving.
