- 100g/3½oz goats' cheese, with rind
- 1 tsp olive oil
- freshly ground black pepper
- mixed herb salad (coriander, basil, flatleaf parsley)
- olive oil, to dress salad
- Heat a griddle pan and drizzle with the oil.
- Grind fresh black pepper generously all over the goats' cheese and place onto the griddle for 3-4 minutes, turning once.
- Place on the herb salad and dress with olive oil.
