Peppered, griddled goats cheese Recipe

  • 100g/3½oz goats' cheese, with rind
  • 1 tsp olive oil
  • freshly ground black pepper
  • mixed herb salad (coriander, basil, flatleaf parsley)
  • olive oil, to dress salad
  1. Heat a griddle pan and drizzle with the oil.
  2. Grind fresh black pepper generously all over the goats' cheese and place onto the griddle for 3-4 minutes, turning once.
  3. Place on the herb salad and dress with olive oil.
