- 1 1/2 tablespoons olive oil
- 2 cloves garlic, chopped
- 2 green peppers, washed, seeded, and sliced
- 1 red pepper, washed, seeded and sliced
- 1 yellow pepper, washed, seeded and sliced
- Salt and pepper
- 4 large eggs, beaten
- Grated parmesan or Romano cheese
- 1 loaf Fresh Bake Shop Italian or French Bread
- Saute garlic in olive oil on medium-low in skillet until the garlic is golden.
- Add peppers and season with salt and pepper to taste.
- Continue cooking and stirring until peppers are a soft texture. Raise heat and add eggs. Stir well, cooking eggs thoroughly.
- Sprinkle with cheese and serve on toasted slices of bread.
