- 4 cloves garlic cloves, peeled
- 2 small tomatoes, cut into wedges
- 1 zucchini, cut in half and sliced
- 1 small onion, cut into wedges
- 2 tablespoons Archer Farms® extra-virgin olive oil
- 2 cups Archer Farms® organic penne pasta
- Heat oven to 375 degrees F. Arrange garlic and vegetables in a 15 X 10 inch baking pan with sides. Drizzle with oil and season with salt and pepper.
- Roast 20 to 25 minutes or until vegetables are tender, stirring occasionally.
- Meanwhile, cook and drain pasta as directed on package. Place in large serving bowl.
- Mash roasted garlic with fork. Toss garlic and vegetables into the hot pasta.
