Penne arrabiata with avocado and rocket salad Recipe

  • 125g/4½oz penne pasta, cooked according to packet instructions
  • 1 tbsp olive oil
  • 1 garlic clove, finely chopped
  • ¼ red onion, finely chopped
  • ½ tsp dried chilli flakes
  • 1 tbsp tomato purée
  • ½ avocado, stone removed, sliced
  • small handful rocket leaves
  • 1 tbsp olive oil
  • ½ tbsp balsamic vinegar
  1. Place all the ingredients for the pasta into a serving bowl, mixing well to combine the ingredients.
  2. For the salad, place all the ingredients on a separate bowl, mixing together well. Serve alongside the bowl of pasta.
