- 125g/4½oz penne pasta, cooked according to packet instructions
- 1 tbsp olive oil
- 1 garlic clove, finely chopped
- ¼ red onion, finely chopped
- ½ tsp dried chilli flakes
- 1 tbsp tomato purée
- ½ avocado, stone removed, sliced
- small handful rocket leaves
- 1 tbsp olive oil
- ½ tbsp balsamic vinegar
- Place all the ingredients for the pasta into a serving bowl, mixing well to combine the ingredients.
- For the salad, place all the ingredients on a separate bowl, mixing together well. Serve alongside the bowl of pasta.
