- 2 1/4 cups all-purpose flour
- 3/4 cup sugar
- 3/4 cup quick-cooking oats
- 1 tablespoon buttermilk blend powder
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 3 eggs
- 1 1/2 cups mashed ripe banana
- 1 cup chopped dried apricots
- 1 cup chopped pecans
- In a large bowl, combine the dry ingredients. In a mixing bowl, beat the eggs, bananas, oil and vanilla. Stir into dry ingredients just until combined. Stir in apricots and pecans. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans.
- Bake at 350 degrees F for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
