- 1 cup shortening
- 1 cup sugar
- 1 cup packed brown sugar
- 2/3 cup peanut butter
- 2 eggs
- 1/3 cup water
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 1/2 cups quick-cooking oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- ICING:
- 1/3 cup butter, softened
- 2/3 cup peanut butter
- 2 cups confectioners' sugar
- 1/3 cup milk
- In a large mixing bowl, cream shortening, sugars and peanut butter. Add eggs, one at a time, beating well after each addition. Add water and vanilla; mix well. Combine the flour, oats, baking powder, baking soda and salt; beat into the creamed mixture until combined. Pour into a greased 15-in. x 10-in. x 1-in. baking pan.
- Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out clean. In a small mixing bowl, beat the icing ingredients until smooth. Pour over warm bars. Cool on a wire rack.
