Peach Soup Recipe

  • 2 1/2 cups water
  • 3/4 cup sugar
  • 1 bag peach tea
  • 1/4 teaspoon freshly grated lime zest
  • 1 large white peach, peeled and cut into 1/4-inch dice
  • 1 large yellow peach, peeled and cut into 1/4-inch dice
  • 1 pint peach sorbet or ice cream
  1. Simmer water and sugar, stirring, until sugar is dissolved. Remove from heat and stir in tea bag and zest. Steep 5 minutes, then discard tea bag. Chill syrup until cold.
  2. Stir peaches into chilled syrup and serve with scoops of sorbet.
