Pasta with Spinach Recipe

  • 1 (8 ounce) package fettuccini, uncooked
  • 1 (16 ounce) package frozen chopped spinach
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup shredded Parmesan cheese
  • 2 tablespoons pine nuts, toasted
  1. COOK fettuccine according to package directions; drain and set aside.
  2. COOK spinach according to package directions; drain and set aside. Saute garlic in olive oil in a large skillet until tender but not brown. Stir in cooked spinach, salt, and pepper; cook until thoroughly heated.
  3. Toss together spinach mixture, fettuccine, Parmesan cheese, and pine nuts in a large serving bowl. Serve immediately.
