- 1 (8 ounce) package fettuccini, uncooked
- 1 (16 ounce) package frozen chopped spinach
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup shredded Parmesan cheese
- 2 tablespoons pine nuts, toasted
- COOK fettuccine according to package directions; drain and set aside.
- COOK spinach according to package directions; drain and set aside. Saute garlic in olive oil in a large skillet until tender but not brown. Stir in cooked spinach, salt, and pepper; cook until thoroughly heated.
- Toss together spinach mixture, fettuccine, Parmesan cheese, and pine nuts in a large serving bowl. Serve immediately.
