Parsley-Caper Broiled Fish Recipe

  • 1 1/4-inch-thick onion slice
  • 2 fresh parsley sprigs
  • 2 anchovies
  • 2 teaspoons drained capers
  • 1 small garlic clove
  • 2 6-ounce orange roughy fillets (about 3/4 inch thick)
  • 1/2 lemon
  1. Preheat broiler. Mince first 5 ingredients together. Brush baking sheet lightly with oil. Place fish on prepared baking sheet. Sprinkle onion mixture over fish. Season with pepper. Broil until fish is just cooked through, about 5 minutes. Squeeze lemon over fish and serve.
