- 110g/4oz new potatoes
- 110g/4oz French beans
- knob of butter
- 2 trout fillets
- salt and freshly ground black pepper
- 55g/2oz unsalted butter, melted
- Bring a pan of water to the boil and boil the new potatoes for 8-10 minutes, or until tender, and the beans for 3-4 minutes. Drain.
- Gently heat the butter in a non-stick frying pan. Season the trout fillet and pan fry for 2-3 minutes on each side.
- Transfer the trout to a serving plate. Spoon the new potatoes and beans alongside and drizzle with the melted butter to serve.
