Pan fried trout with new potatoes and green beans Recipe

  • 110g/4oz new potatoes
  • 110g/4oz French beans
  • knob of butter
  • 2 trout fillets
  • salt and freshly ground black pepper
  • 55g/2oz unsalted butter, melted
  1. Bring a pan of water to the boil and boil the new potatoes for 8-10 minutes, or until tender, and the beans for 3-4 minutes. Drain.
  2. Gently heat the butter in a non-stick frying pan. Season the trout fillet and pan fry for 2-3 minutes on each side.
  3. Transfer the trout to a serving plate. Spoon the new potatoes and beans alongside and drizzle with the melted butter to serve.
