Oven Roasted Salmon with Artichoke Pesto Topping Recipe

  • 2 (6 ounce) filets Waterfront BISTRO® Sockeye Salmon, thawed
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 1/3 cup Signature Cafe® Artichoke Dip
  • 1 tablespoon Signature Cafe® Basil Pesto
  • 1 tablespoon fresh squeezed lemon juice
  1. Combine together the Artichoke Dip, Basil Pesto and lemon juice.
  2. Place salmon skin side down, season with salt and pepper.
  3. Spread the artichoke-pesto mixture onto the salmon filet.
  4. Place fish onto a lightly oiled baking pan and bake in preheated 450 degree oven for 10-11 minutes or until fish is cooked and firm and the topping lightly browned.
  5. Serve immediately.
