- 1 1/2 pounds cooked orzo
- 1 cup chopped cucumber
- 4 ounces onion, chopped
- 3 ounces red bell pepper, chopped
- 3 ounces yellow bell pepper, chopped
- 4 ounces olives, chopped
- 3 ounces mozzarella cheese, diced
- 2 ounces lemon juice
- 3 ounces oil
- 1 tablespoon chopped oregano
- 2 tablespoons chopped basil
- 2 teaspoons minced garlic
- Black pepper to taste
- Combine ingredients. Mix well. Serve.
