Oriental Salad Recipe
- 3 tablespoons peanut oil
- 2 teaspoons sesame oil
- 1/3 cup rice wine or apple cider vinegar
- 1/4 cup sugar
- 4 tablespoons low-sodium soy sauce
- 16 ounces thin noodles, cooked according to package directions
- 1/2 cup chopped cooked chicken breast
- 1/2 cup cooked, peeled and deveined shrimp
- 1/2 cup broccoli florets
- 1/2 pound snow peas
- 1 sweet red pepper, chopped
- 2 scallions, sliced
- 1/2 cup chopped cucumber
- In a small bowl, combine the oils, vinegar, sugar, and soy sauce. Set aside to serve with the salad.
- Arrange the noodles on a serving platter and top with the chicken, shrimp, broccoli, peas, peppers, scallions, and cucumber; or toss all ingredients together, if desired. Serve with the dressing.
