Oriental Salad Recipe

  • 3 tablespoons peanut oil
  • 2 teaspoons sesame oil
  • 1/3 cup rice wine or apple cider vinegar
  • 1/4 cup sugar
  • 4 tablespoons low-sodium soy sauce
  • 16 ounces thin noodles, cooked according to package directions
  • 1/2 cup chopped cooked chicken breast
  • 1/2 cup cooked, peeled and deveined shrimp
  • 1/2 cup broccoli florets
  • 1/2 pound snow peas
  • 1 sweet red pepper, chopped
  • 2 scallions, sliced
  • 1/2 cup chopped cucumber
  1. In a small bowl, combine the oils, vinegar, sugar, and soy sauce. Set aside to serve with the salad.
  2. Arrange the noodles on a serving platter and top with the chicken, shrimp, broccoli, peas, peppers, scallions, and cucumber; or toss all ingredients together, if desired. Serve with the dressing.
